Dining

TRAYLESS DINING

LMU piloted the Trayless concept on Earth Day 2007/8 successfully and began full implementation during the Summer in Roski Dining Hall. Trayless dining preserves 200 gallons of water per 1000 persons served. It is estimated that LMU serves approximately 3000 meals a day. A conservative estimate (which does not Salad barinclude catered events that require trays) results in a savings of 600 gallons of water per day. The annual savings based on 227 academic days - not including summer events - would be estimated at 136,200 gallons of water. There are significant indirect savings as well, including reduced dish machine electricity, chemicals, and food waste.

As LMU celebrates the one-year anniversary of the Presidents Climate Commitment, we continue to explore cost-effective, environmentally responsible solutions while maintaining the clean comfortable aspect in all our dining venues and meeting the service needs of our customers.


Other programs aimed at promoting sustainability include:

  • Refill & Recycle program: Students, faculty and staff are able to receive $.99 refills on coffee, juices and soft drinks by filling their reusable beverage containers at all food and dining locations on campus. Mugs are available for purchase from Sodexho.
  • All campus dining facilities feature Fair Trade Organic Coffee.
  • Food Alliance-certified organic to-go salads are available at Roski Dining Hall.
  • Sodexho is aggressively pursuing a switch to 'cage-free' eggs, and converting at least one dining facility to exclusive use of sustainably harvested, fairly traded goods and organic produce.
  • Use of washware, e.g. plates.
  • Sodexho is now donating its used cooking oil for use in production of alternative fules.
